Ingredients

8 oz penne pasta

2 cups broccoli florets

1 lb chicken breast, diced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tbsp olive oil

3 cloves garlic, minced

1 cup chicken broth

Salt and pepper to taste

1/2 tsp red pepper flakes (optional)

Fresh basil for garnish

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions. About 3 minutes before it's done, add the broccoli florets. Once cooked, drain the pasta and broccoli, then set aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

Prepare the Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer. Allow it to reduce by half, which should take about 3-5 minutes.

Make it Creamy: Reduce the heat to low and stir in the heavy cream, ensuring to mix well. Gradually add the grated Parmesan cheese while stirring continuously until the cheese is melted and the sauce is creamy. Add red pepper flakes for a spicy kick if desired.

Combine Everything: Add the cooked chicken, pasta, and broccoli to the skillet, tossing everything together until well coated in the creamy sauce. If the sauce is too thick, you can add a splash of pasta water to reach your desired consistency.

Serve and Garnish: Taste and adjust seasoning if necessary. Serve the creamy chicken and broccoli penne hot, garnished with fresh basil and extra Parmesan if desired.
