Cowboy Butter Steak Sliders

Ingredients
  

1 lb flank steak, trimmed

Salt and pepper, to taste

1 tablespoon olive oil

8 slider buns

1 cup cheddar cheese, shredded

1 cup arugula or spinach

1 large tomato, sliced

4 tablespoons Cowboy Butter (see recipe below)

For Cowboy Butter:

½ cup unsalted butter, softened

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

1 teaspoon dried parsley

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

Zest of 1 lemon

Make Cowboy Butter: In a small bowl, combine softened butter, minced garlic, Worcestershire sauce, Dijon mustard, smoked paprika, dried parsley, cayenne pepper, lemon zest, salt, and pepper. Mix well until all ingredients are thoroughly combined. Transfer to a piece of plastic wrap, wrap it tightly, and form it into a log shape. Refrigerate until firm, about 30 minutes.

    Prepare the Steak: Season the flank steak generously with salt and pepper on both sides. Heat olive oil in a skillet or grill pan over medium-high heat. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the heat and let it rest for 10 minutes before slicing.

      Slice the Steak: After resting, slice the steak against the grain into thin strips.

        Assemble the Sliders: Slice the slider buns in half and lightly toast them if desired. Place a piece of steak on the bottom half of each bun, followed by a generous dollop of Cowboy Butter, then top with shredded cheddar cheese, arugula or spinach, and a slice of tomato. Add the top half of the bun.
