Before you even think about the chicken, it's crucial to prepare your cooking environment. If you're grilling, preheat your grill to medium-high heat, around 400°F (200°C). If you're opting to bake, preheat your oven to 425°F (220°C). Proper temperature settings are vital; they ensure that the chicken cooks evenly and achieves that desirable golden-brown crust.

Ingredients

4 boneless, skinless chicken thighs

1/2 cup unsalted butter, melted

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 tablespoon fresh thyme leaves

1 tablespoon lemon juice

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

Fresh lime wedges, for serving

Crusty bread or rice, for serving

Instructions

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F/190°C). If using an oven, preheat to 400°F (200°C).

Prepare the Cowboy Butter: In a mixing bowl, combine the melted butter, minced garlic, chopped parsley, chopped chives, thyme, lemon juice, Worcestershire sauce, smoked paprika, cayenne pepper, and a pinch of salt and pepper. Mix well until everything is fully incorporated.

Marinate the Chicken: Place the chicken thighs in a shallow dish and pour half of the cowboy butter mixture over them. Make sure they are well coated. Allow them to marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

        Cook the Chicken:

          - Grilling: Place the marinated chicken thighs on the preheated grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and they are nicely charred.

            - Oven: Alternatively, place the chicken thighs in a baking dish and bake in the preheated oven for 25-30 minutes, basting with the remaining butter halfway through.

Serve: Once cooked, remove the chicken from the grill or oven and let it rest for 5 minutes. Serve it with crusty bread or on a bed of rice, drizzled with the remaining cowboy butter sauce. Squeeze fresh lime juice over the top for an extra zing.

Enjoy: Dig in and enjoy the flavors of the Wild West with this deliciously buttery chicken!
