1 cup cottage cheese (low-fat or full-fat, depending on preference)

1 medium cucumber, diced

1/2 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1/4 cup fresh dill, chopped (or 1 tsp dried dill)

1 tbsp olive oil

1 tbsp apple cider vinegar

Salt and pepper to taste

Optional: 1/4 cup black olives, pitted and sliced

Optional: A squeeze of lemon juice for extra brightness

Instructions
 

In a medium mixing bowl, combine the cottage cheese, diced cucumber, cherry tomatoes, and chopped red onion.

    Add the chopped dill and, if using, the black olives to the bowl.

      In a small bowl, whisk together the olive oil, apple cider vinegar, salt, pepper, and lemon juice (if desired) until well combined.

        Pour the dressing over the cottage cheese mixture and gently stir until everything is evenly coated.

          Taste and adjust the seasoning with more salt, pepper, or vinegar as needed.

            Let the salad sit for about 10 minutes before serving to allow the flavors to meld together.
