4 cups ripe peaches, peeled and sliced

1 cup granulated sugar, divided

1 tablespoon lemon juice

1 teaspoon cinnamon

1 tablespoon cornstarch (optional, for thicker filling)

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

½ teaspoon salt

2 teaspoons baking powder

½ cup unsalted butter, melted

1 cup milk

1 teaspoon almond extract (optional)

Ground nutmeg (for sprinkling)

Fresh mint leaves (for garnish)

Prepare the Peaches: In a large mixing bowl, combine the sliced peaches, ½ cup sugar, lemon juice, cinnamon, and cornstarch if using. Toss gently to coat and set aside to marinate for about 30 minutes.

    Make the Batter: Preheat your oven to 375°F (190°C). In another bowl, whisk together the flour, remaining ½ cup sugar, baking powder, and salt. Gradually add the melted butter and milk, stirring until just combined. If using, add almond extract for an extra layer of flavor.

      Bake the Peaches: Pour the peach mixture into a greased 9x13-inch baking dish, spreading it evenly. Pour the batter over the peaches; do not stir, as the batter will rise to the top while baking.
