4 cups of day-old bread, cubed (such as brioche or challah)

4 large eggs

1 cup milk (whole or almond milk)

1/2 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 teaspoon salt

1/2 cup unsalted butter, melted

For the cinnamon sugar coating:

1/4 cup granulated sugar

1 tablespoon ground cinnamon

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

    Prepare the Bread: In a large mixing bowl, combine the cubed bread and melted butter. Toss until the bread is evenly coated.

      Mix the Wet Ingredients: In another bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, cinnamon, nutmeg (if using), and salt until fully incorporated.

        Combine Mixtures: Pour the egg mixture over the bread cubes. Gently fold the mixture together until all the bread is soaked in the egg mixture. Allow it to sit for about 10-15 minutes so the bread can absorb the liquid.
