Chinese Beef and Onion Stir-Fry

1 lb (450g) beef sirloin, thinly sliced against the grain

2 medium onions, thinly sliced

3 cloves garlic, minced

1-inch piece of ginger, grated

1 bell pepper (any color), sliced

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

2 tablespoons vegetable oil (for frying)

1 teaspoon sugar

1/2 teaspoon black pepper

3 green onions, chopped (for garnish)

Cooked rice or noodles (to serve)

Instructions
 

Marinate the Beef: In a bowl, combine sliced beef with soy sauce, oyster sauce, cornstarch, black pepper, and sugar. Toss until the beef is well coated. Let it marinate for at least 15 minutes.

    Prepare the Vegetables: While the beef is marinating, slice the onions and bell pepper, and mince the garlic and ginger.

      Stir-Fry the Beef: Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Once hot, add the marinated beef in a single layer. Stir-fry for about 3-4 minutes until the beef is browned but not fully cooked. Remove the beef from the wok and set aside.

        Cook the Vegetables: In the same wok, add the remaining tablespoon of vegetable oil. Add the onions, garlic, and ginger, and stir-fry for 2-3 minutes until fragrant and the onions become translucent. Add the sliced bell pepper and continue to stir-fry for an additional 2 minutes.

          Combine and Finish Cooking: Return the beef to the wok, along with any juices released. Drizzle with sesame oil, and stir well to combine all ingredients. Cook for another 2-3 minutes until the beef is cooked through and the sauce has thickened slightly.

            Serve: Remove from heat and transfer to a serving dish. Garnish with chopped green onions and serve hot over cooked rice or noodles.
