This hearty dish combines elbow macaroni with seasoned ground beef (or turkey), kidney and black beans, and crushed tomatoes for a flavor-packed experience. Topped with melty cheddar cheese, it's sure to be a family favorite. Perfect for weeknight dinners, this recipe is quick to prepare and serves 6. Ingredients
  

1 lb elbow macaroni

1 lb ground beef (or turkey)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (28 oz) crushed tomatoes

1 cup beef broth (or vegetable broth)

1 packet (1 oz) chili seasoning mix

2 cups shredded cheddar cheese

1 medium onion, diced

2 cloves garlic, minced

1 tsp olive oil

Salt and pepper to taste

Fresh cilantro and sliced jalapeños for garnish (optional)

Instructions
 

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet or pot, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional 1 minute.

      Brown the Meat: Add the ground beef (or turkey) to the skillet, breaking it apart with a spatula. Season with a pinch of salt and pepper. Cook until no longer pink, about 6-8 minutes. Drain any excess fat.

        Combine Ingredients: Stir in the crushed tomatoes, kidney beans, black beans, beef broth, and chili seasoning mix. Bring to a simmer and cook for about 10 minutes, allowing the flavors to meld together.

          Add the Mac & Cheese: Stir in the cooked macaroni and 1 cup of cheddar cheese until well combined. Heat for an additional 2-3 minutes until the cheese is melted and everything is heated through.

            Top and Serve: Remove from heat and transfer to a serving dish. Sprinkle the remaining 1 cup of cheddar cheese on top. If you like it cheesy, feel free to add extra cheese! Garnish with fresh cilantro and jalapeños if desired.
