Ingredients

For the Chicken Flautas:

2 cups shredded cooked chicken (rotisserie chicken works well)

1 cup shredded cheese (Mexican blend or Chihuahua cheese)

1/2 cup onion, finely chopped

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

10 small corn tortillas

Cooking oil (for frying)

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

For the Fideo:

8 ounces fideo pasta (or vermicelli, broken into smaller pieces)

2 tablespoons cooking oil

1 small onion, diced

2 cloves garlic, minced

1 can (14.5 ounces) diced tomatoes (with juice)

4 cups chicken broth

1 teaspoon cumin

1/2 teaspoon oregano

Salt and pepper to taste

Fresh lime wedges (for serving)

Instructions

Prepare the Chicken Filling:

    - In a mixing bowl, combine the shredded chicken, shredded cheese, chopped onion, garlic powder, cumin, chili powder, salt, and pepper. Mix well until all ingredients are fully incorporated.

      Assemble the Flautas:

        - Heat a small skillet over medium heat. Lightly warm the tortillas one at a time to make them pliable (about 30 seconds per side).

          - Place about 2 tablespoons of the chicken mixture in the center of each tortilla. Roll tightly but not too tight (so the filling doesn't spill out) and secure with a toothpick if needed.

            Fry the Flautas:

              - In a large frying pan, heat about 1 inch of cooking oil over medium-high heat. Once hot, carefully add the rolled flautas to the pan, seam side down. Fry until golden brown and crispy on all sides (about 3-4 minutes). Use tongs to turn them as needed.

                - Drain the fried flautas on a paper towel-lined plate to absorb excess oil.

                  Cook the Fideo:

                    - In a large skillet, heat the oil over medium heat. Add the diced onion and sauté until translucent (about 3 minutes).

                      - Stir in the minced garlic and fideo pasta, cooking until the pasta is lightly golden (about 2-3 minutes).

                        - Add the diced tomatoes (with juice), chicken broth, cumin, oregano, salt, and pepper. Bring to a simmer.

                          - Reduce the heat to low, cover, and cook for about 10-12 minutes, or until the fideo is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

                            Serve:

                              - Plate the crispy chicken flautas with a sprinkle of fresh cilantro. Serve alongside the savory fideo. Add lime wedges to squeeze over the fideo for an extra zesty flavor. Include dollops of sour cream and salsa for dipping.

                                Prep Time: 20 minutes | Total Time: 40 minutes | Servings: 4-6

Enjoy your delicious and flavorful Chicken Flautas paired with savory Fideo, perfect for any gathering or family dinner!
