Chicken Chimichangas

Ingredients
  

2 cups cooked chicken, shredded

1 cup refried beans

1 cup shredded cheese (cheddar or Mexican blend)

1 cup salsa

1 tsp cumin

1 tsp chili powder

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

4 large flour tortillas

Oil for frying (vegetable or canola)

Sour cream, guacamole, and fresh cilantro for garnish

Instructions
 

In a medium bowl, combine cooked shredded chicken, refried beans, half of the shredded cheese, salsa, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well integrated.

    Warm the flour tortillas in the microwave for 20 seconds to make them pliable.

      Lay a tortilla flat and spoon about 1/2 cup of the chicken mixture onto the center. Sprinkle a little of the reserved cheese on top.

        Fold the sides of the tortilla inwards, then roll it up tightly from the bottom to the top, ensuring the filling is sealed inside. Repeat this process for the remaining tortillas and filling.

          Heat about 2 inches of oil in a deep skillet or pot over medium-high heat until it reaches approximately 350°F (175°C).

            Carefully place the chimichangas seam-side down in the hot oil, frying 3-4 at a time for about 4-5 minutes or until golden brown and crispy. Turn them halfway through for even cooking.

              Once cooked, use a slotted spoon to remove the chimichangas and place them on a paper towel-lined plate to drain excess oil.

                Serve hot, garnished with sour cream, guacamole, and fresh cilantro. Enjoy your delicious crunchy chicken chimichangas!
