Chicken Avocado Melt Sandwich

2 cups cooked chicken, shredded or diced

1 ripe avocado, mashed

1/2 cup Greek yogurt (or mayonnaise for a richer flavor)

1 tablespoon lime juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

4 slices of whole-grain or sourdough bread

1 cup shredded mozzarella cheese (or your favorite melty cheese)

1/4 cup fresh cilantro, chopped (optional)

1/2 medium tomato, sliced

Butter for toasting

Prepare the Chicken Mixture: In a medium bowl, combine shredded chicken, mashed avocado, Greek yogurt (or mayonnaise), lime juice, garlic powder, onion powder, salt, and pepper. Mix well until creamy and all ingredients are well incorporated. Stir in chopped cilantro if desired.

    Assemble the Sandwiches: Take two slices of bread and spread a generous amount of the chicken and avocado mixture on each. Add a layer of sliced tomatoes on top, and then sprinkle with mozzarella cheese.
