1 can (400g) of mixed beans (garbanzo, kidney, black beans)

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon ginger, grated

1 green chili, finely chopped (adjust to taste)

1 teaspoon cumin seeds

1 teaspoon coriander powder

1 teaspoon garam masala

1 teaspoon smoked paprika

Salt and pepper to taste

100g cream cheese (or vegan alternative)

50g grated cheddar cheese (or vegan cheese substitute)

4 slices of whole grain bread

Fresh coriander leaves, for garnishing

Instructions
 

Prepare the Beans: Drain and rinse the mixed beans under cold water; set aside.

    Sauté Aromatics: In a medium skillet, heat olive oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Then add the chopped onion, garlic, ginger, and green chili. Sauté until the onion becomes translucent, about 3-4 minutes.

      Spice it Up: Stir in the coriander powder, garam masala, smoked paprika, salt, and pepper, cooking for another minute until fragrant.

        Combine Beans: Add the rinsed mixed beans to the skillet and gently mix to coat them with the spices. Cook for about 5 minutes, stirring occasionally.

          Creamy Delight: Lower the heat and stir in the cream cheese until fully combined. Then add half of the grated cheddar cheese and mix until melted and creamy. Adjust seasoning if necessary.

            Toast the Bread: While the beans are cooking, toast the slices of whole grain bread until golden brown.

              Serve: Scoop the cheesy masala beans generously onto the toasted bread, topping each slice with the remaining cheddar cheese. Garnish with fresh coriander leaves.
