Cheesy Beef Enchilada Tortellini

12 oz cheese tortellini (fresh or frozen)

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) enchilada sauce (red or green)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tbsp olive oil

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Instructions
 

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent (about 3-4 minutes).

      Add the Beef: Add the ground beef to the skillet. Cook until browned, breaking it up with a wooden spoon (about 5-7 minutes). Drain excess fat if needed.

        Season the Beef: Stir in the cumin, chili powder, salt, and pepper to the beef mixture. Pour in the enchilada sauce and mix well. Bring the mixture to a simmer for about 3 minutes.

          Combine with Tortellini: Add the cooked tortellini to the skillet, gently folding it into the beef and sauce mixture until evenly coated.

            Cheesy Topping: Sprinkle both the cheddar and Monterey Jack cheeses over the top of the tortellini and meat mixture. Cover the skillet with a lid and allow to cook for an additional 5-7 minutes on low heat, until the cheese melts and becomes bubbly.
