Ingredients

For the Cheesy Beef Burritos:

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 cup cooked rice

1 cup black beans, rinsed and drained

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tbsp taco seasoning

1 tbsp olive oil

4 large flour tortillas

Salt and pepper to taste

Sour cream and salsa for serving (optional)

For the Crispy Fries:

3 large russet potatoes, washed and cut into fries

2 tbsp olive oil

1 tsp paprika

1 tsp garlic powder

Salt and pepper to taste

Instructions

Prepare the Fries: Preheat your oven to 425°F (220°C). In a bowl, toss the cut potatoes with olive oil, paprika, garlic powder, salt, and pepper until well coated. Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden and crispy, flipping halfway through for even cooking.

Cook the Beef Mixture: In a large skillet over medium heat, add olive oil. Once hot, add the onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute.

Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula, about 6-8 minutes. Drain any excess grease.

Add Flavorings: Stir in the cooked rice, black beans, taco seasoning, salt, and pepper. Cook for an additional 3-5 minutes until everything is heated through. Remove from heat.

Assemble the Burritos: Lay a tortilla flat on a plate. In the center, place a generous portion of the beef mixture and sprinkle with a mix of cheddar and Monterey Jack cheese. Fold in the sides and roll tightly. Repeat with the remaining tortillas and filling.

Heat the Burritos: In a clean skillet, lightly coat the bottom with a bit of olive oil over medium heat. Place the burritos seam-side down and cook until golden brown on each side, about 3-4 minutes per side.

Serve it Up: Once cooked, slice the burritos in half if desired. Serve with the crispy fries on the side, and garnish with sour cream and salsa.
