Ingredients

1 lb (450g) frozen hash brown potatoes

8 oz (225g) bacon, chopped

1 cup (240ml) heavy cream

1 cup (240ml) milk

3 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon black pepper

1 cup (100g) shredded cheddar cheese

1/2 cup (50g) crumbled feta cheese

1/4 cup (25g) chopped fresh chives (optional for garnish)

Salt to taste

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels, leaving about 1-2 tablespoons of bacon grease in the skillet.

Sauté Hash Browns: In the same skillet, add the frozen hash browns and cook until lightly golden and thawed, about 10 minutes. Stir occasionally to prevent sticking.

Prepare the Custard Mixture: In a large mixing bowl, whisk together the heavy cream, milk, eggs, garlic powder, onion powder, paprika, black pepper, and salt until well combined.

Combine Ingredients: Layer the sautéed hash browns in a greased 9x13 inch baking dish. Sprinkle the cooked bacon over the hash browns, then evenly pour the custard mixture over the top.

Cheese It Up: Sprinkle the shredded cheddar cheese and crumbled feta cheese on top of the casserole.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is golden and the casserole is set.

Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh chives if desired, then slice into squares and serve warm.
