1 cup rolled oats

2 cups almond milk (or your preferred milk)

1 medium carrot, finely grated

1/2 banana, mashed

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 cup raisins (optional)

1/4 cup chopped walnuts or pecans

2 tablespoons maple syrup or honey (optional)

1 teaspoon vanilla extract

Pinch of salt

Cream cheese or Greek yogurt for topping (optional)

Additional walnuts or pecans for garnish (optional)

Instructions
 

In a medium saucepan, combine the rolled oats, almond milk, grated carrot, mashed banana, cinnamon, nutmeg, and a pinch of salt. Stir well to combine.

    Bring the mixture to a gentle boil over medium heat, then reduce the heat to low and let it simmer for about 5-7 minutes, stirring occasionally, until the oats have absorbed most of the liquid and have reached your desired consistency.
