Ingredients

For the Butter Steak Bites:

1 lb sirloin steak, cut into 1-inch cubes

Salt and black pepper, to taste

3 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

For the Garlic Herb Potatoes:

1 lb baby potatoes, halved

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare Garlic Herb Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a large mixing bowl, combine the halved baby potatoes with olive oil, minced garlic, oregano, salt, and pepper. Toss until evenly coated.

        - Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.

          - Roast in the preheated oven for 25-30 minutes or until golden and fork-tender, flipping halfway through.

            Cook the Butter Steak Bites:

              - While the potatoes are roasting, season the steak cubes with salt and black pepper.

                - Heat a large skillet over medium-high heat and add 2 tablespoons of butter. Once melted and bubbling, add the seasoned steak bites in a single layer (you may need to do this in batches).

                  - Sear the steak bites for about 2-3 minutes on each side until they are browned but still medium-rare in the center.

                    - Add the minced garlic, rosemary, and thyme to the skillet with the steak bites. Stir well and cook for an additional minute until the garlic is fragrant and slightly golden. Remove from heat and stir in the remaining tablespoon of butter until melted.

                      Serve:

                        - Once the potatoes are done, remove them from the oven and sprinkle with fresh parsley.

                          - Plate the garlic herb potatoes alongside the butter steak bites. Drizzle any remaining garlic butter from the skillet over the steak bites for extra flavor.

Enjoy your Butter Steak Bites with Garlic Herb Potatoes!
