2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 cup Greek yogurt (plain or vanilla)

1/2 cup fresh blueberries (or mixed berries)

1/2 cup chopped walnuts or pecans (optional)

1 tablespoon lemon zest (optional for an extra zing!)

Powdered sugar for dusting (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan to ensure easy removal after baking.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

        Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

          Gradually add the dry ingredients to the wet mixture, alternating with Greek yogurt. Begin and end with the flour mixture. Mix until just combined.

            Gently fold in the blueberries, chopped nuts (if using), and lemon zest until evenly distributed.

              Pour the batter into the prepared Bundt pan and smooth the top with a spatula.

                Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted in the center comes out clean.

                  Allow the cake to cool in the pan for about 10-15 minutes before inverting onto a wire rack to cool completely.

                    Once cooled, dust with powdered sugar if desired, slice, and serve with your favorite morning beverage.
