Ingredients
  

2 slices of sourdough bread

1 cup shredded cooked chicken

1/4 cup buffalo sauce (adjust to taste)

1/2 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

2 tablespoons cream cheese, softened

2 tablespoons butter, softened

1 tablespoon chopped green onions (for garnish)

Optional: lettuce or spinach for added crunch

Instructions
 

In a mixing bowl, combine the shredded cooked chicken with the buffalo sauce. Mix well until the chicken is coated in the sauce.

    In another bowl, blend the cream cheese with the shredded cheddar and mozzarella to create a cheesy spread. This will add creaminess to your sandwich.

      Butter one side of each slice of sourdough bread. The butter will help achieve a golden, crispy crust when grilled.

        On the non-buttered side of one slice, spread a generous layer of the cheesy mixture.

          Top the cheese layer with the buffalo chicken mixture, spreading it evenly.

            If using, add a layer of lettuce or spinach for extra texture.

              Close the sandwich with the other slice of sourdough, buttered side up.

                Heat a skillet over medium heat. Once hot, carefully place the sandwich in the skillet. Cook for 4-5 minutes on one side until golden brown and crispy.

                  Carefully flip the sandwich and cook for an additional 4-5 minutes on the other side until the cheese is fully melted and the bread is golden.

                    Remove from the skillet, let it cool for a minute, then slice the sandwich in half for easy eating. Garnish with chopped green onions before serving.
