Ingredients

1 package of mini sausages or cocktail franks

1 can of crescent roll dough (8 oz)

4 large eggs

1 cup shredded cheddar cheese

¼ cup chopped green onions

Salt and pepper to taste

Olive oil or cooking spray (for greasing)

Optional: hot sauce or your favorite dipping sauce

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a baking sheet with olive oil or cooking spray.

Prepare the Dough: Unroll the crescent roll dough on a clean surface. Separate it into individual triangles as indicated on the package.

Prepare the Eggs: In a medium bowl, whisk the eggs, then season with a pinch of salt and pepper. Scramble them in a skillet over medium heat until just set. Remove from heat and let cool slightly.

Assemble the Pigs in a Blanket: Place a mini sausage at the wider end of each crescent triangle. Top each sausage with a spoonful of scrambled eggs and a sprinkle of shredded cheddar cheese and chopped green onions.

Wrap It Up: Carefully roll up each sausage from the wide end to the point, ensuring the filling stays inside. Pinch the seams to seal the rolls.

Bake: Place the assembled pigs in a blanket onto the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, or until the dough is golden brown and puffed.

Serve: Allow to cool slightly before serving. These breakfast delights are perfect with hot sauce or your favorite dipping sauce on the side.
