Ingredients

8 oz bow tie pasta (farfalle)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper (red or yellow), diced

1/2 red onion, finely chopped

1 cup black olives, sliced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool down. Set aside.

Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Place them in a large mixing bowl.

Mix the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, oregano, salt, and pepper until fully combined.

Combine Ingredients: Once the pasta is cooled, add it to the bowl with the chopped vegetables. Pour the dressing over the pasta and veggies. Toss gently until everything is well coated.

Add Flavor Boosters: Fold in the sliced black olives, crumbled feta cheese, and chopped parsley. Mix lightly to combine.

Chill: Cover the pasta salad with plastic wrap or transfer it to an airtight container. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

Serve: Give the salad a light toss before serving. Enjoy as a refreshing side dish or a light main course!
