2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, melted and slightly cooled

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

2 cups fresh blueberries (or frozen, if in season)

Zest of 1 lemon (optional)

1 tablespoon sugar for topping (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a standard muffin tin with paper liners or grease with non-stick spray.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. If using lemon zest, stir it in at this stage for an extra punch of flavor.

      Mix Wet Ingredients: In another bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk until well combined.

        Combine Wet and Dry: Pour the wet ingredients into the dry ingredients. Gently fold the mixture together using a spatula or wooden spoon until just combined. Do not overmix; the batter should be slightly lumpy.

          Add Blueberries: Gently fold in the blueberries to the batter, being careful not to break them apart.

            Fill Muffin Tins: Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full. If desired, sprinkle a little sugar on top of each muffin for a sweet crust.

              Bake: Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                Cool: Remove the muffins from the oven and allow them to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
