1 loaf of challah or brioche bread, cut into 1-inch cubes

8 ounces cream cheese, softened

1 cup fresh blueberries (you can use frozen if fresh isn’t available)

6 large eggs

2 cups whole milk

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup maple syrup (plus extra for serving)

Powdered sugar, for dusting, optional

Instructions
 

Prepare the Casserole:

    - Preheat your oven to 350°F (175°C).

      - Grease a 9x13 inch baking dish with cooking spray or butter.

        - Place the cubed bread into the prepared baking dish evenly.

          Make the Cream Cheese Mixture:

            - In a medium mixing bowl, beat the softened cream cheese until smooth.

              - Gently fold in the blueberries until evenly distributed.

                - Drop spoonfuls of this cream cheese mixture over the bread cubes, ensuring it’s spread out for even distribution.

                  Prepare the Egg Mixture:

                    - In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt until well combined.

                      - Pour this mixture evenly over the bread and cream cheese mixture, pressing gently on the bread with a spatula to help it soak up the egg mixture.

                        Chill the Casserole:

                          - Cover the dish with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.

                            Bake the Casserole:

                              - If refrigerated overnight, allow the casserole to sit at room temperature for about 20-30 minutes before baking.
