BLT Chicken Salad

Ingredients
  

2 cups cooked chicken, shredded or diced

4 slices of thick-cut bacon, cooked and crumbled

2 cups romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 avocado, diced

½ cup red onion, thinly sliced

½ cup crumbled blue cheese (optional)

¼ cup mayonnaise

2 tablespoons Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper, to taste

Fresh chives, for garnish

Instructions
 

In a large mixing bowl, combine the shredded or diced chicken, crumbled bacon, chopped romaine lettuce, halved cherry tomatoes, diced avocado, and sliced red onion. If you’re using blue cheese, add it to the mixture as well.

    In a separate small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, salt, and pepper until smooth and creamy. Adjust seasoning if necessary.

      Pour the dressing over the chicken mixture and gently toss to combine, ensuring all ingredients are coated evenly with the dressing.

        For extra flavor, let the salad sit for about 10-15 minutes at room temperature to allow the flavors to meld.
