4 (6 oz) salmon fillets, skin-on

2 tablespoons olive oil

1 tablespoon smoked paprika

1 teaspoon cayenne pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

1 cup heavy cream

2 tablespoons Dijon mustard

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Prepare the Blackening Spice: In a small bowl, mix together the smoked paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper until well combined.

    Season the Salmon: Pat the salmon fillets dry with paper towels. Rub each fillet on both sides with olive oil and generously coat them with the blackening spice mixture, pressing it in to ensure it adheres.

      Cook the Salmon: Heat a large cast-iron skillet or heavy skillet over medium-high heat. Once hot, add the salmon fillets, skin side down. Cook for about 4-5 minutes until the skin gets crispy and the flesh starts to cook through. Flip the fillets and cook for an additional 3-4 minutes, or until the salmon is cooked to your desired doneness. Remove from the skillet and set aside.

        Make the Creamy Dijon Sauce: In the same skillet, reduce the heat to medium. Add the heavy cream, stirring to combine with the pan drippings. Gradually whisk in the Dijon mustard and lemon juice, cooking for about 2-3 minutes until the sauce thickens slightly. Taste and adjust seasoning if necessary.
