500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, coarsely ground

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

4 cloves garlic, minced

1-inch piece ginger, grated

1 bell pepper, sliced

1 onion, sliced

2 spring onions, chopped

Salt to taste

Fresh cilantro, for garnish

Instructions
 

In a large bowl, combine the chicken pieces, half of the black pepper, soy sauce, oyster sauce, and cornstarch. Mix well until the chicken is evenly coated. Marinate for at least 20 minutes.

    Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken in a single layer. Sear until golden brown on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      In the same skillet, add more oil if needed. Add garlic and ginger, sautéing for about 30 seconds until fragrant.

        Add the sliced onion and bell pepper to the skillet. Stir-fry for about 3-4 minutes or until they begin to soften.

          Return the chicken to the skillet. Sprinkle in the remaining black pepper and salt to taste. Stir everything together and cook for an additional 5 minutes, ensuring the chicken is cooked through.

            Garnish with chopped spring onions and fresh cilantro before serving.
