Ingredients

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly cracked

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon honey

4 cloves garlic, minced

1 inch ginger, grated

1 bell pepper (red or green), sliced

1 onion, sliced

2 tablespoons vegetable oil

Salt, to taste

Fresh cilantro, for garnish

Cooked jasmine rice, for serving

Instructions

In a bowl, combine the chicken pieces with soy sauce, oyster sauce, honey, minced garlic, ginger, and half of the black pepper. Mix well to ensure the chicken is evenly coated. Let marinate for at least 30 minutes for better flavor absorption.

Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinaded chicken. Sear for about 5-7 minutes until lightly browned and cooked through. Remove the chicken and set aside.

In the same skillet, add the sliced onion and bell pepper. Stir-fry for about 3-4 minutes until they begin to soften.

Return the cooked chicken to the skillet with the vegetables. Sprinkle the remaining black pepper and add salt to taste. Stir well to combine and heat through for about 2-3 minutes.

Garnish with freshly chopped cilantro and serve hot over cooked jasmine rice.
