For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 cup unsalted butter, cold and cubed

3/4 cup whole milk

For the Chorizo Gravy:

1/2 pound Mexican chorizo (or Spanish chorizo for a milder flavor)

1/4 cup all-purpose flour

2 cups whole milk

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (adjust to taste)

Salt to taste

Chopped fresh parsley for garnish (optional)

Instructions
 

Prepare the Biscuits:

    - Preheat your oven to 450°F (230°C).

      - In a large mixing bowl, sift together the flour, baking powder, and salt.

        - Add the cold, cubed butter into the flour mixture. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.

          - Make a well in the center, pour in the milk, and gently stir until just combined. Do not overmix.

            - Turn the dough out onto a floured surface and knead gently for about 30 seconds, until it comes together.

              - Pat the dough into a 1-inch thick round. Cut out biscuit rounds using a biscuit cutter or a glass, and place them on a baking sheet lined with parchment paper.

                - Bake for 12-15 minutes or until the tops are golden brown.

                  Make the Chorizo Gravy:

                    - In a large skillet over medium heat, cook the chorizo, breaking it up with a spatula, until browned and cooked through (about 5-7 minutes).

                      - Sprinkle in the flour and stir well to combine, cooking for another 1-2 minutes.

                        - Gradually pour in the milk while continually stirring to avoid lumps. Bring to a simmer.

                          - Season with black pepper, cayenne pepper, and salt (to taste). Cook until the gravy thickens, stirring frequently (about 5 minutes).

                            - If the gravy becomes too thick, add a bit more milk to reach your desired consistency.

                              Serve:

                                - Split the warm biscuits in half and ladle chorizo gravy generously over them.

                                  - Garnish with chopped fresh parsley if desired and serve hot.
