Bibingka Recipe

2 cups rice flour

1 cup coconut milk

1 cup water

3/4 cup sugar

1 teaspoon baking powder

1/4 teaspoon salt

2 ripe bananas, sliced

1/2 cup grated coconut (fresh or desiccated)

1/2 teaspoon vanilla extract

2 tablespoons butter, melted (plus extra for greasing)

Banana leaves for lining

Instructions
 

Prepare the Banana Leaves: Carefully pass the banana leaves over an open flame or dip them in hot water to make them pliable. Line the bottom of small baking pans or a round baking dish with the leaves. Make sure they overlap slightly to avoid leaks.

    Mix Dry Ingredients: In a large mixing bowl, combine the rice flour, sugar, baking powder, and salt. Whisk until well-blended.

      Combine Wet Ingredients: In another bowl, mix the coconut milk, water, melted butter, and vanilla extract until fully combined.

        Combine Mixtures: Gradually pour the wet mixture into the dry mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are fine.

          Assemble the Bibingka: Pour half of the batter into the lined baking pan. Layer the sliced bananas evenly over the batter. Pour the remaining batter on top of the bananas.

            Bake: Preheat the oven to 375°F (190°C). Place the baking pan in the oven and bake for about 25-30 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

              Add Coconut Topping: After baking, sprinkle grated coconut on top and return to the oven for an additional 5 minutes or until the coconut is slightly toasted.

                Cool and Serve: Remove from the oven, let it cool for a few minutes, then slice and serve warm, optionally drizzled with more coconut milk or topped with a bit more grated coconut.
