1 lb boneless, skinless chicken thighs (cut into 1-inch pieces)

1/2 cup soy sauce

1/4 cup brown sugar

2 tablespoons honey

2 tablespoons rice vinegar

2 cloves garlic (minced)

1 tablespoon fresh ginger (minced)

1 tablespoon sesame oil

1 tablespoon cornstarch

2 tablespoons water

1 cup bell peppers (cut into chunks, mix of colors)

1 cup zucchini (sliced into thick rounds)

1/2 cup green onions (cut into 2-inch pieces)

Sesame seeds (for garnish)

Bamboo skewers (soaked in water for 30 minutes to prevent burning)

Instructions
 

Prepare Marinade: In a mixing bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, minced garlic, minced ginger, and sesame oil until the sugar is fully dissolved.

    Marinate Chicken: Place the chicken pieces in a large resealable plastic bag or bowl. Pour the teriyaki marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the bowl and marinate in the refrigerator for at least 1 hour or up to overnight for the best flavor.

      Prepare Skewers: Preheat your grill to medium-high heat. Remove the chicken from the marinade, reserving the marinade for later. Thread the marinated chicken onto the soaked bamboo skewers, alternating with bell pepper chunks, zucchini slices, and green onion pieces.
