Ingredients

8 oz spaghetti or fettuccine

2 cups cooked chicken breast, shredded or diced

4 slices thick-cut bacon, chopped

2 large eggs

1 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 cup heavy cream

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: crushed red pepper flakes (for added spice)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Sauté the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 6-8 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, leaving the drippings in the skillet.

Prepare the Sauce: In a bowl, whisk together the eggs, grated Parmesan cheese, and heavy cream. Season with a pinch of salt and freshly cracked black pepper.

Combine Ingredients: In the same skillet with the bacon drippings, add the minced garlic, and sauté for about 30 seconds until fragrant. Stir in the shredded chicken and cook just until heated through.

Mix Pasta and Sauce: Add the drained pasta to the skillet and toss to combine with the chicken and garlic. Remove the skillet from heat. Quickly add the egg and cheese mixture, tossing vigorously to prevent the eggs from scrambling. Use reserved pasta water to achieve your desired creamy consistency.

Final Touches: Stir in the crispy bacon and season with additional salt, pepper, and crushed red pepper flakes if desired. Garnish with fresh parsley.

Serve: Plate the chicken carbonara immediately while it’s warm, and sprinkle with extra Parmesan cheese if you like.
