For the dumplings:

1 cup all-purpose flour

1/2 cup water

1 teaspoon salt

200g ground chicken or tofu

2 green onions, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon soy sauce

1 teaspoon sesame oil

1 teaspoon curry powder

For the soup:

6 cups chicken or vegetable broth

1 can (400ml) coconut milk

2 tablespoons red curry paste

1 tablespoon fish sauce (or soy sauce for a vegetarian version)

1 tablespoon lime juice

1 cup carrots, julienned

1 bell pepper, sliced

1 cup green beans, trimmed and cut

Fresh cilantro and lime wedges for garnish

Instructions
 

Make the Dumplings:

    - In a mixing bowl, combine flour and salt. Gradually add water while stirring until a dough forms. Knead for about 5 minutes until smooth. Cover with a damp cloth and set aside.

      - In another bowl, mix ground chicken (or tofu), green onions, garlic, ginger, soy sauce, sesame oil, and curry powder until well combined.

        - Roll out dough on a floured surface to about 1/8 inch thick. Cut rounds (about 3 inches in diameter) using a cookie cutter or glass.

          - Place a teaspoon of the filling in the center of each round. Fold and pinch the edges to seal tightly. Set aside.

            Prepare the Soup:

              - In a large pot, heat a little oil over medium heat. Add red curry paste and fry for about 1-2 minutes until fragrant.

                - Pour in the chicken (or vegetable) broth and coconut milk. Stir well to combine.

                  - Add fish sauce and lime juice, bringing the soup to a gentle simmer.

                    - Stir in carrots, bell pepper, and green beans. Let cook for about 5 minutes until vegetables are tender.

                      Cook the Dumplings:

                        - Gently add the prepared dumplings to the simmering soup. Cook for about 6-8 minutes or until dumplings float to the surface and are fully cooked.

                          - Taste the broth and adjust seasoning as necessary.
