For the BBQ Chicken Skewers:

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1/2 cup barbecue sauce (your favorite brand)

1 tbsp olive oil

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

8-10 wooden skewers (soaked in water for 30 minutes)

For the Salad:

6 cups mixed greens (spinach, arugula, romaine)

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cup cucumber, sliced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

2 tbsp fresh cilantro, chopped

1/4 cup ranch dressing or additional barbecue sauce for drizzling

Instructions
 

Prepare the Marinade: In a bowl, mix the olive oil, barbecue sauce, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the chicken cubes, tossing to coat well. Marinate in the refrigerator for at least 30 minutes, preferably 1-2 hours.

    Preheat the Grill: Heat your grill or a grill pan over medium-high heat.

      Assemble the Skewers: Thread the marinated chicken onto the soaked skewers, leaving a little space between each piece for even cooking.

        Grill the Chicken: Once the grill is ready, place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Brush with additional barbecue sauce during the last few minutes of cooking if desired. Remove from heat and let cool slightly.

          Prepare the Salad: In a large salad bowl, combine mixed greens, cherry tomatoes, avocado, cucumber, red onion, and feta cheese. Toss gently to mix.

            Serve the Salad: Remove the chicken skewers from the sticks and place them on top of the salad. Drizzle with ranch dressing or additional barbecue sauce, garnish with chopped cilantro, and serve immediately.
