2 cups cooked chicken, shredded

1 cup BBQ sauce (your choice)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup corn (canned or frozen)

4 large flour tortillas

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Jalapeños, sliced (optional, for spice)

Prepare the Chicken: In a mixing bowl, combine the shredded chicken with the BBQ sauce, ensuring all the chicken is well-coated.

    Heat the Skillet: In a large skillet, heat 1 tablespoon of olive oil over medium heat.

      Assemble the Quesadilla: Lay one flour tortilla in the skillet. On half of the tortilla, spread a quarter of the BBQ chicken mixture. Top with a quarter of the cheddar cheese, mozzarella cheese, a sprinkle of red onion, and corn.
