BBQ Chicken Grilled Cheese

Ingredients
  

2 cups cooked chicken, shredded

1/2 cup BBQ sauce (your favorite brand)

4 slices of sourdough or Texas toast

1 1/2 cups shredded cheddar cheese

1/2 cup sliced pickles (optional)

2 tablespoons butter

Salt and pepper to taste

Fresh cilantro or green onions for garnish (optional)

Instructions
 

In a medium bowl, mix the shredded chicken with the BBQ sauce until well combined. Season with salt and pepper to taste.

    Heat a skillet over medium heat and add 1 tablespoon of butter, allowing it to melt and coat the pan.

      Place two slices of bread in the skillet, and on each slice, pile on 1/2 cup of the BBQ chicken mixture.

        Generously sprinkle 3/4 cup of shredded cheddar cheese on top of the chicken. If desired, add sliced pickles on top of the cheese.

          Place the remaining two slices of bread on top to form sandwiches.

            Grill the sandwiches for about 3 to 4 minutes on one side, until golden brown and crispy.

              Carefully flip the sandwiches, adding the remaining tablespoon of butter to the skillet. Cook for another 3 to 4 minutes, or until the other side is also golden and the cheese has melted.

                Remove the sandwiches from the skillet and let them sit for a minute. Slice in half, garnish with fresh cilantro or green onions if desired, and serve hot.
