Ingredients
  

1 lb boneless, skinless chicken thighs

1 cup cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

2 cups cooked jasmine rice

1 cup shredded cabbage (purple or green)

1/2 cup green onions, chopped

1 avocado, sliced

Sesame seeds for garnish

Fresh cilantro leaves for garnish

Salt and pepper to taste

Oil for frying

Instructions
 

Prepare Chicken: Season the chicken thighs with salt and pepper. Cut them into bite-sized pieces.

    Breading Station: Set up a breading station with three shallow dishes: one with cornstarch, one with beaten eggs, and one with panko breadcrumbs.

      Bread the Chicken: Dip each piece of chicken first into the cornstarch (coating it lightly), then into the egg, and finally coat it with panko breadcrumbs, pressing gently to adhere.
