Ingredients

4 large russet potatoes

1/4 cup olive oil

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Leave the skins on for extra texture. Cut each potato in half lengthwise, then each half into 4 wedges (you should have around 32 wedges).

Mix the Seasonings: In a large bowl, whisk together the olive oil, minced garlic, Parmesan cheese, onion powder, smoked paprika, oregano, salt, and black pepper until well combined.

Coat the Wedges: Add the potato wedges to the bowl and toss them thoroughly in the garlic Parmesan mixture, ensuring each wedge is nicely coated.

Arrange on Baking Sheet: Spread the coated potato wedges in a single layer on the prepared baking sheet, making sure they aren’t overcrowded for even baking.

Bake: Place the baking sheet in the preheated oven and bake for about 30-35 minutes, turning the wedges halfway through baking until they are golden brown and crispy.

Garnish and Serve: Remove the wedges from the oven, sprinkle with fresh chopped parsley, and serve immediately while hot. Enjoy them with your favorite dipping sauce!
