Baked Feta Pasta

Ingredients
  

200g of feta cheese

300g of cherry tomatoes

3 cloves of garlic, minced

2 tablespoons of olive oil

1 teaspoon of dried oregano

1/2 teaspoon of red pepper flakes (optional)

250g of pasta (e.g., penne or fusilli)

Salt and black pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving (optional)

Instructions
 

Preheat your oven to 200°C (400°F).

    In a large ovenproof dish, combine the cherry tomatoes, minced garlic, olive oil, oregano, red pepper flakes, salt, and black pepper. Toss everything together until the tomatoes are well coated.

      Place the block of feta cheese in the center of the tomato mixture and drizzle it with a little olive oil and a pinch of salt and pepper.

        Bake in the preheated oven for about 25 minutes, or until the tomatoes are bursting and the feta is golden and soft.

          While the feta and tomatoes are baking, cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.

            Once the baking is complete, remove the dish from the oven and stir everything together to create a creamy sauce. If the sauce is too thick, add some reserved pasta water a little at a time until the desired consistency is achieved.

              Gently fold the cooked pasta into the sauce until evenly coated.

                Serve hot, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.
