Baked Boursin Spaghetti Squash

Ingredients
  

1 medium spaghetti squash

8 oz Boursin cheese (garlic & herbs or your favorite flavor)

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1/2 cup grated Parmesan cheese

2 tbsp olive oil

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    Slice the spaghetti squash in half lengthwise and scoop out the seeds.

      Drizzle the inside of each half with olive oil and season with salt and pepper.

        Place the squash halves cut-side down on a baking sheet lined with parchment paper.

          Bake in the preheated oven for about 30-40 minutes, or until the flesh is tender when pierced with a fork.

            While the squash is baking, heat a medium-sized skillet over medium heat. Add the chopped spinach and sauté until wilted, about 2-3 minutes.

              In a mixing bowl, combine the Boursin cheese, sautéed spinach, halved cherry tomatoes, and half of the grated Parmesan cheese. Mix until well combined.

                Once the squash is done baking, remove it from the oven and flip it over so the cut side is facing up.

                  Use a fork to fluff the spaghetti-like strands of squash, gently pulling them away from the skin.

                    Spoon the Boursin mixture evenly into each half of the spaghetti squash.

                      Top with the remaining grated Parmesan cheese.

                        Return the stuffed squash to the oven and bake for an additional 15 minutes, until everything is heated through and the cheese is bubbly.

                          Remove from the oven and let cool for a few minutes. Garnish with fresh basil if desired.
