8 oz elbow macaroni

6 slices of thick-cut bacon, chopped

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1/2 cup panko breadcrumbs

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy, about 7-10 minutes. Using a slotted spoon, transfer the cooked bacon to a paper towel-lined plate to drain, leaving the bacon grease in the skillet.

      Make the Roux: In the same skillet, add 2 tablespoons of butter to the bacon grease and let it melt. Sprinkle in the flour and whisk continuously for about 2 minutes until the mixture is golden and bubbly.

        Add Milk and Seasonings: Gradually pour in the whole milk while whisking to prevent lumps. Add the Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Continue to whisk and bring the mixture to a simmer, allowing it to thicken for about 3-5 minutes.

          Incorporate the Cheese: Reduce the heat to low, then stir in the shredded sharp cheddar and Gruyère cheese. Keep stirring until the cheese is completely melted and the sauce is smooth.

            Combine Pasta and Bacon: Add the cooked macaroni and crispy bacon into the cheese sauce, stirring to combine everything thoroughly.

              Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture into a greased 9x13 inch baking dish.

                Top with Panko: In a small bowl, mix the panko breadcrumbs with a tablespoon of melted butter. Sprinkle the buttery panko evenly over the mac and cheese.

                  Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and crispy.

                    Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
