Avocado, Mozzarella, and Tomato Grilled Cheese

Ingredients
  

2 slices of sourdough bread or your choice

1 ripe avocado, mashed

4 ounces fresh mozzarella, sliced

1 large tomato, sliced

1 tablespoon basil pesto (optional)

2 tablespoons unsalted butter

Salt and black pepper, to taste

Fresh basil leaves (for garnish, optional)

Prepare the Avocado Mixture: In a small bowl, mash the ripe avocado with a fork until smooth. Add salt and pepper to taste. If using, mix in the basil pesto for an extra kick of flavor.

    Assemble the Sandwich: Lay one slice of sourdough bread on a clean surface. Spread the mashed avocado mixture generously on top. Next, layer the sliced mozzarella and tomato over the avocado. If desired, add another layer of pesto on top of the tomato slices. Top with the second slice of sourdough.

      Butter the Bread: Spread 1 tablespoon of unsalted butter on the outside of the top slice of the sandwich. Flip the sandwich over and butter the other side as well.

        Cook the Sandwich: Heat a skillet or Panini press over medium heat. Once hot, place the sandwich in the skillet. Cook for about 3-4 minutes or until the bread is golden brown. Carefully flip the sandwich and cook the other side for another 3-4 minutes, pressing down lightly with a spatula to ensure even cooking.

          Serve: Once both sides are perfectly golden and the mozzarella is melted, remove the sandwich from the skillet. Allow it to cool for a minute, then cut in half. Garnish with fresh basil leaves if desired.
