1 cup all-purpose flour

1/2 teaspoon salt

1/4 cup water (plus more if needed)

1/2 pound ground pork (or chicken)

1/4 cup finely chopped green onions

1 tablespoon minced ginger

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon chili paste (adjust to taste)

For the Soup:

6 cups chicken broth

1 cup sliced shiitake mushrooms

1 cup bok choy, chopped

1/2 cup sliced carrots

2 tablespoons soy sauce

1 tablespoon chili oil (or to taste)

1 teaspoon apple cider vinegar

Salt and pepper to taste

Fresh cilantro, for garnish

Make the Dumpling Dough:

    - In a mixing bowl, combine the flour and salt. Gradually add the water, mixing until a dough forms. Knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
