3 cups fresh spinach, roughly chopped

2 tablespoons olive oil

3 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Fresh basil leaves, for garnish

Boil Pasta: In a large pot, bring salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Garlic: In the same pot (or a large skillet), heat olive oil over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

      Add Spinach: Slowly add the chopped spinach to the pot, stirring until wilted down, which should take about 2-3 minutes.

        Combine Pasta: Add the drained pasta back into the pot with the spinach and garlic mixture. Toss everything together.
