300g udon noodles (fresh or dried)

4 tablespoons chili oil (adjust for spice preference)

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon sesame oil

2 green onions, finely chopped

1 tablespoon rice vinegar

1 tablespoon sugar

1/2 teaspoon salt (adjust to taste)

Optional toppings: sesame seeds, chopped cilantro, sliced radishes, or boiled eggs

Instructions
 

Cook the Udon Noodles: Bring a large pot of water to a boil. Add the udon noodles and cook according to the package instructions (typically about 3-4 minutes for fresh noodles or 8-10 minutes for dried noodles). Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a small bowl, combine the chili oil, minced garlic, soy sauce, sesame oil, rice vinegar, sugar, and salt. Mix well until the sugar dissolves.

      Combine Noodles and Sauce: In a large mixing bowl, toss the cooked udon noodles with the chili oil sauce until evenly coated.

        Garnish: Sprinkle the finely chopped green onions over the noodles. If desired, add any of the optional toppings like sesame seeds, chopped cilantro, sliced radishes, or halves of boiled eggs for extra flavor and garnish.
